Where wood shingles or shakes are used a minimum 1 4 inch 6 mm vented air space separates the shingles or shakes and the roofing underlayment above the structural sheathing.
This clearance is more than sufficient to prevent any water from entering your house through the ridge vent.
If you want a low slope roof without any spray foam or rigid foam there are only two approaches that will work as far as i know.
Turbine vents are not low profile but in windy climates they provide more ventilation than other types of roof vents.
I don t know what the minimum slopes allowed for your type of metal roof materials are.
So that probably means you are going to use a modified bitumen roof or something like that for the 5 12 low slope flat roofs.
For over generations multi residential flats buildings were constructed in north american with low slope roofs.
